When I stumbled upon Sanjeev kapoor’s chilli garlic okra recipe I was so tempted to try immediately. I luckily had okra i hand and made this with some major changes. I paired up chilli garlic okra with veg fried rice Indian style and it was one excellent meal. Chilli okra was so flavorful, tasty with crispy okra perfectly complimenting the spicy n sweet sauce. This is the first time I am using Okra in an Indo chinese recipe and it was very good. One more addition to our favorite indo chinese recipes!
I took the recipe Idea from Sanjeev kapoor’s but I have quiet modified the recipe. First I have not deep fried the okra here. I just shallow fried the okra in less oil for 10 minutes in low flame. Shallow frying in low flame till okra crisps up does take time but you need very less oil here. Next I did not make any corn flour based sauce. I just made a quick sauce with onion, capsicum and tossed the sauteed okra. This way the entire dish turned out be somewhat dry, the way we like it.
To make chilli garlic okra I have used colored bell peppers along with okra. You can use green ones too. Adding bell peppers gives a nice crunch and flavor to the dish. I have used sesame oil to make this chilli garlic okra. The flavor and taste of sesame oil is great in Asian recipes.
Serve chilli garlic okra with fried rice.

Step by step chilli garlic okra recipe
1. To begin making chilli garlic okra,wash and pat dry the okras thoroughly. Cut into 1.4″ pieces.
2. Take the chopped okra in a mixing bowl. Add corn flour,pepper powder and some salt. Toss well.
3. Heat tablespoons oil in a kadai. Shallow fry okra in batches in low flame. It takes around 15 minutes to shallow fry the okras until crispy. Remove the fried okra to a kitchen towel.
4. In the same oil add chopped spring onion whites. Saute for a minute. Add crushed garlic and saute well.
5. Add chopped bell peppers and saute well for 2 minutes.
6. Add tomato sauce,soy sauce, pepper powder, salt and mix well. Cook for 4-6 minutes in medium flame.
7. Once the sauce in well cooked, add the fried okras and toss well. Toss in high flame for a minute or two. Garnish with spring onion greens and remove from flame. Serve chilli garlic okra hot.

Ingredients
- 25 okras
- 1/2 teaspoon pepper powder
- 2 tablespoons corn flour
- Salt
- For sauce
- 1/2 red bell pepper cubed
- 1/2 green bell pepper cubed
- 1/4 cup chopped spring onion whites
- 4-6 garlic cloves crushed
- 2 teaspoons soy sauce
- 2 tablespoons tomato sauce
- 1/2 teaspoon pepper powder
- Salt
- Sesame oil
- 3 tablespoons chopped spring onion greens
Instructions
