Last month I promptly bought few Christmas theme cookie cutters online and gingerbread man cookie cutter was one among them. So here I am with an easy yet terrific recipe for eggless gingerbread man cookies and not to forget eggless royal icing.
I have tasted gingerbread cookies only twice or thrice but liked it very much. The flavor of dry ginger, nutmeg and black pepper was so good and I loved the flavor of honey and molasses in the cookies too. Overall it is a very different cookie than what we always make. I have made these gingerbread man cookies with 100% whole wheat flour. I feel whole wheat flour adds more taste and color to these cookies. I referred simply recipes gingerbread man cookies for an idea and replaced few ingredients as per availability. I used demerara sugar, honey instead of molasses and left out the egg.
To make gingerbread man cookies we need some time in hand. Rolling the dough and cutting the shape repeatedly sure takes some time. Next piping with royal icing too takes time. I took around 1 hour to make and decorate the cookies. My piping skills are pathetic and this is the first time I decorated (??) a cookie :). That explains enough the level of piping.
Royal icing is a kind of icing used to decorate cookies. It is egg based icing. The eggless version of royal icing is only a substitute and corn flour is used for setting.

Step by step gingerbread man cookies recipe
1.Take soft butter in a mixing bowl. Add powdered sugar to it and starting creaming. Cream well until the mixture is light and creamy.
2. Slowly add the honey and mix thoroughly.
3. Now sift together wheat flour, baking powder, black pepper powder, nutmeg powder, cinnamon powder, dry ginger powder.
4. Add the flour spice mixture to the butter honey mixture. Mix everything and make dough. Cling wrap or place the dough in zip lock pouch. Refrigerate for 3 hours. You may let it sit overnight too.
5. Remove the dough and divide into 2 equal parts. Roll part into circle of 1/4 thickness. Preheat oven at 180C.
6. Using a gingerbread man cookie cutter cut out shapes. Arrange the cut cookies in a baking tray.
7. Bake in the preheated oven for 10-12 minutes. Once done cool throughly.
8. To make the royal icing combine corn flour, icing sugar,lemon juice and milk. Mix well without any lumps. The icing should be thick yet flowing. Adjust milk or sugar quantity as required.
9. Decorate your cooled cookies with this icing as required. Once the icing is well set store gingerbread man cookies in airtight container and serve as required.

1 CUP = 250 ml

- 1 1/2 cup whole wheat flour
- 100 grams soft butter unsalted
- 1/4 cup honey
- 1/2 cup demerara sugar powdered
- 3/4 tablespoon dry ginger powder/ sukku powder
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon cinnamon powder
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
Instructions
