Nokkal recipe with step by step photos. Sharing a very authentic and traditional sweet recipe from Tambram cuisine. Nokkal is the term for sugar coated goodies. Plain nokkal often means only cashew nokkal, sugar coated whole cashews. However nokkal can also be prepared with thick plain sev. Nokkal is a must in tambrahm weddings. It is a part of seer bakhshanam and in paruppu thengai. I have a surplus stock of whole cashews so making nokkal was in cards. The only special ingredient you need for making this nokkal is raw whole cashews.
To make nokkal recipe we need just 4 ingredients. cashews, sugar, water and cardamom powder.

How to make nokkal recipe with step by step photos.
Dry roast cashews for 4-5 minutes.
Heat 1 cup sugar with 1/2 cup water until 1 string consistency is reached. You can leave 1.5 string consistency too.
Switch off the heat and add the roasted cashews. Keep mixing throughout for 5-7 minutes.
Transfer to a plate and spread as single layer. The sugar will crystallize and form a coating on cashews on cooling. Cool thoroughly and store in airtight container. Serve nokkal as snack.

- 1 cup raw whole cashews

- 1/2 teaspoon cardamom powder optional.
