Mint leaves are known as pudina in many Indian languages and are used very widely in Indian cuisine in chutney, making biryani, lemonade, thogayal.
This pudina rice is mildly spiced and goes very well with any spicy gravy or curry. For toddlers and kids you can serve this pudina pulao with raita or curd.
I often make this pudina rice or cilantro rice for lunchbox for my husband and kid. This rice tastes well even when it is cold and mess free to pack in lunch. I do add loads of veggies to make this rice wholesome, nutritious and tasty.
Pudina pulao recipe is so easy that you can make within 20 minutes in a pressure cooker. I always use my big pot like pressure cooker for making pulao, it is easy, mess free and quick. By the time the pulao is cooking, you can fix your side dish too easily.
To make pudina rice I usually grind mint leaves along with green chilies and cumin seeds. This masala is then sauteed with veggies. Then you add the soaked rice, just enough water and pressure cook. Easy and delicious mint rice ready

Serve pudina rice with some spicy gravy like achari gobi, paneer lababdar, veg korma, baby corn masala, capsicum curry, aloo curry.
Variations and Tips For Making Best Mint Pulao
Pudina pulao can be made in various ways. I usually add veggies but you can also make plain pudina rice if you don’t have veggies handy.
For a subtle flavor you can add some grated coconut or roasted gram along with mint leaves while preparing the masala paste.
You can use basmati rice or reglar raw rice for this recipe. Do soak the rice for 30 minutes, drain well and use.
If you ave cooked and cooled rice you can use that too. Just prepare the masala, steam the veggies and saute well. Finally add the cooked rice and toss.

How To Make Pudina Rice Recipe:
1. Rinse and saok basmati rice in enough water for 1-2 hours. In the mean time chop the washed vegetables into uniform cubes.
2. Take washed mint leaves, cumin seeds, peeled ginger and green chilies in a small mixer jar. Grind to a smooth paste without water.
3. Heat 2 tablespoons oil in a big pressure cooker. Add cumin seeds, fennel seeds and let them crackle. Add bay leaf, black cardamom, green cardamom, cloves and cinnamon stick. Saute well till aroma wafts out.
4. Add finely chopped onions and saute till the color changes slightly.
5. Add the cubes vegetables and saute well for 2-3 minutes.
6. Next add the prepared pudina spice paste and coat the veggies well.
7. Drain the rice and add to the vegetables. Mix well and saute well for 5-6 minutes.
8. Add 3 cups water and required salt.
9. Close the pressure cooker and pressure cook for 2-3 whistles. Once the pressure is released, open an mix gently. Serve pudina pulao hot with any side dish and raita.

1 CUP = 250 ml
Ingredients
- 1 1/2 cups basmati rice
- 1 1/4 cup cubes vegetables potato, carrot,cauliflower,peas and beans
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds
- 2 cloves
- 1 green cardamom
- 1 black cardamom
- 1 bay leaf
- salt
- 2 tablespoons oil
- For spice paste:
- 1 1/2 cups tightly packed mint leaves
- 1 " ginger piece peeled
- 2-3 green chilies
- 1/2 teaspoon cumin seeds
