Spicy oven roasted nuts recipe
Star ingredients:Cashew nuts and peanuts
Time:10 minutes+30 minutes
1 cup unsalted peanuts
1 cup cashew nuts broken into two
2 tablespoons gram flour
2 tablespoons cornflour
2 teaspoons ghee
1 teaspoon oil
1/2 teaspoon turmeric powder
1/2 teaspoon asafoetida
1 teaspoon chilli powder
1/2 teaspoon chilli powder
1/2 teaspoon garam masala
1/2 turmeric powder
1/2 teaspoon kasuri methi crushed
1.Mix all the ingredients except oil in a wide tray. Add the spicing of your choice and mix well. If using the second set of spicing kasuri methi has to be added after roasting.
2.Pre heat oven at 180C. Prepare a baking sheet by greasing with little oil. Tranfer the prepared nuts mixture to the baking sheet as a single layer.
3.Add half teaspoon oil and mix well,roast in oven for 15 minutes.Remove from oven mix well add 1/2 more teaspoon of oil and roast for 15 more minutes.
4.Remove from oven,cool for 10 minutes,transfer to an airtight container.
1.If using kasuri methi use after roasting as it tends to become very bitter otherwise.
2.You can even add chaat masala and amchur as spicing
3.For an entirely different flavor use chilli flakes,crushed garlic oregano etc.
4.If you want a thick crust increase flours by 1 more tablespoon and form a thick batter and then coat the nuts.
