What’s more, you can totally control the sugar and cream in this ice cream recipe. But do note that if you add way more fruit puree, the ice cream will lack its signature creamy texture and there might be some crystals especially with fruit based ice creams.
To make strawberry ice cream recipe, you just need 4 main ingredients. Strawberry puree, milk powder, fresh cream and sugar. I have added some milk and vanilla but they are optional.
You just puree the strawberry and blend it with milk and mi;k powder first.Pureed strawberry is blended with milk powder and milk. Next whip the fresh cream with sugar until soft peaks are formed. Fold the strawberry puree in the whipped cream very gently.
Freeze for 4 hours, beat and break any ice crystals with a fork and freeze for 8-12 hours. Scoop and serve as required.
Serve strawberry ice cream with chocolate sauce, chopped nuts, chocolate chips
Variations And Tips With Strawberry Ice Cream
Since we use fresh fruit here, the flavor is very subtle flavor. You can add 1/4 cup more fruit puree if needed.
For some texture you can add some very finely chopped strawberries.
You can serve this ice cream with some finely chopped strawberries, nuts as well.
You can follow the same recipe with raspberries or mangoes.

How To Make Strawberry Ice Cream Recipe Step by Step
1.Place a mixing bowl for whipping cream and a container to freeze ice cream in freezer for 1 hour. Wash and hull the strawberries. Chop the berries roughly. Transfer to a blender jar and puree the berries.
2.Add milk powder and ½ cup milk to the strawberry puree. Blend again until smooth and light.
3.Take the mixing bowl from the freezer. Add thick chilled cream to it. Add powdered sugar and start whipping. You can whip using a beater or hand whisk. Whip until the cream is light and fluffy.
4.Add the strawberry puree to the cream sugar mixture and fold gently.
5.Transfer the strawberry ice cream mixture to the chilled container. Close the container and freeze for 4 hours.
6.Remove the ice cream mixture from freezer and whisk well to break the ice formation. Close the container and freeze for 8 hours
7.Once the ice cream is fully set it is ready to be served. Keep the ice cream at room temperature for 5 minutes. Scoop and serve strawberry ice cream in cups or cones as required.

- 1 1/2 strawberry puree from about 300 grams strawberries
- 400 grams fresh cream
- 1/2 cup milk powder
- 1/2 cup sugar

2. Fresh cream we get here in India is low fat cream. Make sure to bet until light and fluffy.
