Whenever I feel like I need a break from regular meals/chapathi for dinner,the first thing that comes to mind is pizza.What I love most about pizza is its versatility.One can do wonders with toppings and sauces in a pizza and recently I came to know there are also pizzas with out sauces.I was quite impressed with that and wanted to try my hands on it.I was also eying on thin crust grilled pizza for a long time and I combined all those in this recipe.I made this pizza with whole wheat,I am trying to control the consumption of maida/all purpose flour,as it is highly unlikely to use what in cakes/pastries,I avoid maida in savory bakes as far as possible. Last evening I made paneer tikka for evening snacks and saved few pieces for making this pizza.I have eaten this kind of pizza in a local small coffee shop near my home and wanted to recreate the same at home.As I have used quite spicy paneer and veggies,I skipped the sauces and just topped with cheese.I first thought of not using italian spices but I finally I just sprinkled a little over the cheese and it was yum.The flavors blended so well.This pizza turned out to be the yummiest home made pizza I have made so far.The crust is crispy and simply amazing with grill marks.
Thin crust grilled paneer tikka pizza recipe
Star ingredients:Prepared paneer tikka pieces along with capsicum,onion
Time:15 minutes+2 hours40 minutes
Yield:3 6″ pizza
1 1/2 cups whole wheat flour
1/4 cup milk
1/8 cup oil
1 1/4 teaspoon active dry yeast
2 teaspoons sugar
1/2 cup luke warm water
1 cup paneer tikka along with onions and bell pepper
1 cup grated mozzarella cheese
1.Prepare dough as mentioned here with the above mentioned ingredients for dough.Let it rest for 2 hours or until it doubles in volume.
2.Preheat oven at 250C.Punch the raised dough and knead again.Divide into 3 parts.Take one portion and roll out to a circle.Make it thinner than usual pizza,say 1/4″ lesser than usual pizza.Do not roll it as thin as chapathi dough.
3.Carefully transfer the rolled dough to the grill plate of your oven and bake for 5 minutes.Remove from oven,flip and spread some grated cheese all over.Arrange the tikka pieces and cover with required amount of grated cheese.
4.Top with chilli flakes and herbs.Grill for 10-12 minutes.You can grill further if you want a crispy base.Cut into wedges and serve hot.
1.This pizza gets cooked quite fast as we are grilling at the max temperature.So keep an eye after 8 minutes to avoid burning.
