Samosa also known as samsa is a deep fried delicacy popular across India.The most commonly known version is Punjabi samosa,where in a cone out of maida is filled with potato masala,sealed and deep fried.While I like this samosa,which one do I love the most? It is a different version of samosa popular all over Tamil nadu,can be found in the corners of most of the streets.Unlike its Punjabi counterpart,the filling is very spicy with onions,carrots.peas along with potatoes In some places they don’t even use potatoes.These samosas are comparatively smaller in size.These are very crispy,flaky,literally oil will be dripping if bought outside :)Though not very healthy,I never hesitate to indulge in these occasionally.I have the luxury of having these treats just few steps away from home in my hometown.Making these samosas at home are easy to do than said.Though the process may sound complicated,it is easy if you follow the pictures.I got the procedure and recipe from the vendor near my home.I Made this with my sister,well the complete rolling and stuffing and frying part was done by her,off to the recipe 🙂
Vegetable samosa recipe
Star ingredients:All purpose flour and assorted veggies
Time: 45 minutes
1 1/4 cup all purpose flour
2 tablespoons oil
2 large potatoes boiled and mashed well
1 carrot grated
1/4 green bell pepper chopped fine
1 large onion sliced thin
2 green chillies
1 teaspoon chilli powder
1 teaspoon turmeric powder
1 teaspoon cumin seeds
1.Mix flour,oil and salt.Add water and make a stiff dough.The dough should be stiff yet pliable for crispy and flaky samosa.Let the dough rest while we prepare the filling.Make a thick paste with maida and water.Keep aside.
2.Heat a kadai and add 3 tablespoons oil.Temper with cumin,green chillies and ginger.Add onions and saute till translucent.Add the bell pepper,carrots,chilli powder and turmeric powder.Saute well for 10 minutes.Next add the potatoes and mix well.Add salt and saute for 10 minutes.Add cilantro and remove from flame.
3.Divide the prepared dough into 4 equal portions.Roll out one portion into a thin circle on a clean surface.Make it a square by cutting over the edges.
4.Cut into three strips as seen in picture.
5.Now take about a tablespoon of filling and place on the top corner of one strip as seen in picture.Fold to a triangle and repeat the same till the end.
6.Repeat the same with all the 12 strips.
7.Heat oil for deep frying,deep fry the samosas till dark golden from both sides in medium flame.
1.You can add peas in the stuffing along with other ingredients
2.It is important to knead the dough stiff and roll it out thin.Dont make the strip too long,as it will increase the folds and make the samosas dense.
