Ingredients

  • 6 capsicum rings in mixed colors
  • 1/4 cup gram flour
  • 1/4 cup rice flour
  • 2 tablespoons bajra flour
  • 2 tablespoons ragi flour
  • 3/4 cup mixed veggies carrot, onion, tomatoes, zucchini
  • 2 green chilies
  • small piece of ginger
  • 2 tablespoons sour curd
  • Salt
  • 2 teaspoons oil

Instructions

  • Take the roughly chopped veggies, ginger, green chili in a mixer jar. Just pulse twice or thrice without any water.
  • Take all the flours and salt in a mixing bowl. Add the veggie mixture and 2 tablespoons sour curd.
  • Mix well and form a batter with idli batter consistency.
  • Heat a tava and add 2 teaspoons oil. Spread the oil well. Once the tava is hot place the capsicum rings.
  • Spoon in the batter inside the rings and cook for 2-3 minutes in medium flame.
  • Slowly flip and cook the other side. Also the capsicum rings should wilt. Once both sides are golden brown remove from flame and serve veg pancakes hot.
