- 6 capsicum rings in mixed colors
- 1/4 cup gram flour
- 1/4 cup rice flour
- 2 tablespoons bajra flour
- 2 tablespoons ragi flour
- 3/4 cup mixed veggies carrot, onion, tomatoes, zucchini
- 2 green chilies
- small piece of ginger
- 2 tablespoons sour curd
- Salt
- 2 teaspoons oil
Take the roughly chopped veggies, ginger, green chili in a mixer jar. Just pulse twice or thrice without any water.
Take all the flours and salt in a mixing bowl. Add the veggie mixture and 2 tablespoons sour curd.
Mix well and form a batter with idli batter consistency.
Heat a tava and add 2 teaspoons oil. Spread the oil well. Once the tava is hot place the capsicum rings.
Spoon in the batter inside the rings and cook for 2-3 minutes in medium flame.
Slowly flip and cook the other side. Also the capsicum rings should wilt. Once both sides are golden brown remove from flame and serve veg pancakes hot.
