Ingredients

  • 2 cups whole wheat flour + 1/4 cup if needed
  • 100 grams soft unsalted butter
  • 1/2 cup cream cheese
  • 2 -3 tablespoons fresh beet root juice.
  • 1 cup white or cane sugar
  • 2 tablespoons cocoa powder
  • Nuts for topping

Instructions

  • Take soft butter and sugar in a mixing bowl. Cream together until light and fluffy.
  • Add cream cheese, beet juice and mix thoroughly.
  • Add wheat flour, cocoa powder and make a dough. Do not add water or milk to the dough.
  • Wrap the paper in between butter papers and refrigerate for an hour.
  • Roll the dough into a circle of 1/4 in thickness.preheat oven at 180C.
  • Cut on heart shaped or any shapes as desired. Place on the greased baking sheet. Top with powdered nuts.
  • Bake in the hot oven for 10-12 minutes. The cookies should be slightly hard and crispy at the edges. The cookies turn very crispy and melt in mouth on cooling. Store red velvet cookies airtight and serve as required.

Notes

1. the cookies easily go from done to burnt. Keep watching after 10 minutes.
2. Do not dilute the beet juice. Just puree the beet and pass through a sieve to get juice.
