Ingredients

  • 1 cup unsweetened khoya
  • 1 cup almonds
  • 1/4 cup + 2 tablespoons sugar
  • 2-3 tablespoons gulkand syrup
  • More gulkand for topping
  • 1 teaspoon ghee

Instructions

  • Blanch the almonds in boiling water for 5 minutes. Peel the almonds. Dry roast the peeled almonds for 2 minutes. Next Grind the almonds without adding water.
  • Heat 1 teaspoon ghee in a thick pan. Add crumbled khoya and saute for 2-3minutes. Add the sugar and mix well. Cook in medium flame till the sugar dissolves and mixture turns to a soft mass.
  • Add 2 tablespoons gulkand. ( I have added the syrup alone to get smooth pedas). Mix well.
  • Add the powdered almonds and mix well. Cook for 3-4 minutes.
  • Remove from flame and allow the mixture to cool for few minutes.
  • Shape into pedas while the mixture is still warm.
  • Make a dent in the center fill with gulkand. Allow the pedas to set for 15 minutes. Serve almond pedas as diwali dessert.

Notes

1. Do not cook for more time after adding almonds. The pedas will not be smooth
2. You can use cashews or pista in place of almonds
