Ingredients

  • 1 cup whole almonds
  • 1/2 cup sugar
  • 1/4 cup water
  • Saffron strands

Instructions

  • Blanch almonds in boiling water for 5 minutes. peel the almonds.
  • Dry roast the almonds for 2-3 minutes to remove the moisture.
  • Grind the almonds very well without adding water.
  • Heat a pan and add 1/2 cup of sugar + 1/4 cup of water. Make one string sugar syrup. It will take around 3-4 minutes to reach one string consistency. Add saffrin strands to the sugar syrup and mix well.
  • Keep the flame low and add almond powder. Mix well quickly.
  • Cook in low medium flame until the mixture turns to a soft mass and leave the sides of the pan. It will take around 5-7 minutes in low flame.
  • Quickly remove to a bowl. Allow it turn warm. Knead the katli mixture very well. Knead it until turns smooth and soft.
  • Roll into a circle of desired thickness on a butter paper.
  • Cut into squares or diamonds. Store badam katli in airtight box.

Notes

1. Make the entire recipe in low-medium flame.
2. blanching and peeling the almonds yield soft katli
3. The katlis turn soft depending up on how well you knead.
