Ingredients
Potato filling for sev puri
25-30mini puris
2potatoesboiled, peeled and slightly mashed
3tablespoonswhole green gramboiled
1/2teaspoonchili powder
rock salt

For making spiced curd
1/2cupcurd
Rock salt

For green chutney
1cupcoriander leavestightly packed
1/4cupmint leaves
3green chilies
Small piece of gingerpeeled
1teaspoonlemon juice
1teaspoonroasted cumin powder
A pinch of chaat masala powder
For sweet chutney
10seedless dates
1lemon sized tamarind ball
3tablespoonsgrated jaggery
1/2teaspoonroasted cumin powder
1/2teaspoonchili powder
1/2teaspoondry ginger powder
1/2cupto 1 cup water
Rock salt
For garnishing sev puri
Chopped cilantro leaves
chopped onion
Chopped tomatoes

Instructions
First begin by boiling the potatoes and moong dal. Boil, peel and roughly mash the potatoes. Do not mash then thoroughly.
Take mashed potatoes and boiled moong dal in a mixing bowl.
Making spiced curd
Add fresh curd in a mixing bowl and whisk till smooth. To that add rock salt, chaat masala powder, chili powder, sugar and mix very well. Set aside.
Making green chutney
Grind together the ingredients mentioned under green chutney. Mix well and set aside.
Making sweet chutney
Bring 1/2 cup water to boil in a pan. Add dates and tamarind. Cook in medium flame for 10 minutes. Add grated jaggery, rock salt, chili powder, dry ginger powder, chaat masala powder and mix well. Cook for 5 more minutes. Remove from flame and allow to cool. Once cold grind to a fine paste. This is sweet chutney.
Once all these ingredients are we can assemble sev puri easily.
Take a fried puri and make a dent in the center. Fill with potato moong mixture. Add sweet chutney, green chutney, curd and sev. Add tomato, onion and cilantro leaves. Top with more sev. Serve sev puri immediately.

1. The quantity of chutneys that goes into each puri is as per your taste. 2. Add more toppings like raw mango, bhoondi as per taste.
