Ingredients

  • 2 cups mix vegetables Carrots,potatoes,green peas,cauliflower
  • 1 large onion sliced
  • 2 medium tomatoes chopped fine
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chilli powder
  • Salt
  • 2 teaspoons oil
  • 1/2 teaspoon mustard seed
  • 1/2 teaspoon cumin seeds
  • Few cilantro leaves
  • To grind:
  • 3 tablespoons grated coconut OR 6-7 coconut pieces
  • 1 tablespoon roasted gram pottu kadalai
  • 8 small onions/pearl onions
  • 3-4 dried red chillies
  • 3-4 green chillies
  • 2 teaspoons coriander seeds
  • 1/4 teaspoon fenugreek seeds

Instructions

  • Grind roasted gram,green chillies,dried red chillies,pearl onions,coconut pieces or grated coconut,cashew nuts,coriander seeds to a very fine paste.
  • Par boil cauliflower and set aside. Steam or pressure cook the other veggies,carrots,potatoes,green peas,beans until they are cooked. They should be cooked yet hold the shape. (3-4 whistles in pressure cooker).
  • Heat oil in a kadai and temper with mustard,cumin and grated ginger. Saute well and add the sliced onions. Saute till they turn pinkish.
  • Add the chopped tomatoes and saute well till it turns mushy.
  • Now add the ground paste and mix well. Add chilli powder,turmeric powder and mix well.
  • Add 1 cup water,salt and cook for 7-9 minutes till the gravy slightly thickens.
  • Add the cooked veggies,mix gently and simmer for 10-12 minutes till the gravy thickens even more. Add coriander leaves and mix well. Serve Mixed veg korma hot with rice/rotis.

Notes

1. Do not reduce the amount of chillies as coconut and roasted gram will reduce and balance the spice,for the given amount of chillies this veg korma is very mildly spiced.
2. Instead of cashews you can blanched almonds too.
3. If you want you can add 1-2 tablespoons curd for tangy flavor.
