Ingredients

  • For cookies
  • 1 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup soft butter unsalted
  • 1/4 cup sugar powdered
  • 1/4 teaspoon baking powder
  • Some plain sugar for sprinkling on top
  • A pinch of salt
  • 1 tablespoon honey
  • Vanilla
  • For chocolate cream
  • 2 tablespoon butter soft
  • 2 tablespoon icing sugar
  • 1 tablespoon cocoa powder
  • 1 tablespoon milk

Instructions

  • Beat butter and sugar until light and creamy. To that sift flour, cocoa powder, salt and sugar. Add vanilla and honey. Mix well. Make a soft dough and cover it well. Chill for 2 hours.
  • Take the chilled dough and roll into a rectangle of 2 mm thickness. You can make a neat rectangle by scraping off the sides. Now cut out rectangle shaped cookies from the rolled dough. Prick some holes on each cookie. Arrange the cookies on a greased baking sheet. Sprinkle some sugar on top of the cookies
  • Preheat oven at 170C. Bake the cut cookies for 12-15 minutes. Cool well before filling with chocolate cream.
  • To make chocolate cream filling
  • Beat sugar, cocoa powder and butter until light and fluffy. Add milk and mix well to get spreadable consistency.
  • To sandwich the bourbon biscuits.
  • Spread some cream on the bottom side of a cookie and press gently with another cookie. Store the sandwiched cookies for 2-3 days in airtight container. Plain cookies will be good for a week.

Notes

1.The number of cookies depends on the size you cut.
2. Make sure to cool the cookies before filling with chocolate cream
3. You can use some custard powder in the filling
