Ingredients
200gramspaneergrated or scrambled
1/3green bell peppervery finely chopped
1/3red bell peppervery finely chopped
1/3yellow bell peppervery finely chopped
1 tomatofinely chopped
1onionthinly sliced
2-3green chiliesslit
1/2teaspoongaram masala powder
1/4teaspoonturmeric powder
1teaspoonminced ginger-garlic
1/2teaspooncumin seeds
2tablespoonscilantro leavesfinely chopped
1/2tablespoonlemon juice
1tablespoonoil

Instructions
Bring out the paneer from refrigerator and thaw for 30-60 minutes. Scramble the paneer well with hands. It is ok if there are few uneven pieces of paneer.
Heat a kadai with 1 tablespoon oil. Add cumin seeds and let them crackle. Add slit green chilies, minced ginger-garlic and saute well till the raw smell goes off.
Add finely chopped onions and saute till color changes slightly.
Add finely chopped tomatoes and mix well. Saute till the tomatoes turn mushy and leave out oil.
Add finely chopped bell peppers and mix well. Saute in high flame for 3-4 minutes. Season with salt. Add garam masala powder and turmeric powder. Mix well and saute for 6-7 more minutes.
Add scrambled paneer and toss quickly. Cook for 3-4 minutes. Add finely chopped cilantro leaves and mix well. Remove from flame. Add lemon juice just before serving paneer bhurji.
Notes
1. Veggies are optional. 2. Do not cook for more time after adding paneer. 3. Add lemon juice just before serving.
