large potatoes

curry leaves

Chili powder
Oil for deep frying
Instructions
Wash and peel the potatoes. Slice into thin fingers with mandoline or grate using grater.
Heat oil for deep frying. Deep fry peanuts, curry leaves and cashews. Remove to a plate.
Now in the same oil, deep fry grated potatoes in batches.
Mix with fried nuts and curry leaves, sprinkle salt and chili powder. Mix well and store potato mixture airtight
Notes
1. You can add raisins and almonds if you wish.
2. You can fry 1/8 teaspoon asafoetida along with curry leaves and add to the mixture.
