Ingredients

  • 2 cups rice flour
  • 1 cup mashed potato
  • 1/2 teaspoon carom seeds
  • 1/2 teaspoon chilli powder
  • 1/4 teaspoon asafoetida
  • Salt
  • Oil for deep frying

Instructions

  • Boil,peel and mash the potatoes very well. Mash them while they are still hot using a potato masher or a ladle,there should be no big pieces at all.
  • Heat oil for deep frying.Keep the flame in medium-low.
  • In a Mixing bowl,measure and add the rice flour. Add the mashed potatoes.
  • Add carom seeds,salt and chilli powder.
  • Take 3 tablespoons of hot oil (the one we kept for deep frying) and add it to the bowl.
  • Mix well till the mixture resembles bread crumbs.
  • Add 3/4 cup little by little and make a soft yet stiff dough. (Do not add more than 3/4 cup water )
  • Take a murukku press with desired shape. I have used a press with 3 star shape.
  • Fill the press with dough and press into murukkus. You can do it either over the hot oil or in a separate sheet/ladle/plate and slide it in the oil.
  • Deep fry till golden. Once you slide the murukku in oil wait till the bubbles settle before flipping,once the bubbling noise completely stops,fry for 2-3 seconds extra and then remove. Remove the excess oil by placing in an absorbent sheet or vattil. Finish the remaining dough the same way.
  • Store the potato murukku in an airtight jar and serve as needed. Stores well for 2-3 weeks.

Notes

1. For the given measurement do not add more than 3/4 cup water.
2. Make sure mash the potatoes very well,if dough has pieces it will block the hole while pressing.
3. Maintain the flame in medium,if it is too high,murukkus will become reddish,if the flame is very low it will soak up oil
4.You can add cumin instead of carom seeds
